Greenbox at gn connect 2024: Shaping the Future of Gastronomy Sustainably and Innovatively

From eco-friendly packaging to service robots – Gastronovi hosted a day full of presentations, networking, and education to bring the industry together and foster innovation.

On September 10, more than 500 guests gathered at the popular event location “Alte Werft” in Bremen to explore current trends and complex issues in the gastronomy industry. The occasion was Gastronovi’s “gn connect” – a conference that took place for the second time this year with support from JOKE Event AGGastronovi (a subsidiary of Transgourmet and provider of software and all-in-one solutions for gastronomy and hospitality) created the event as a meeting point for restaurateurs, experts, and industry enthusiasts.

Ideas like cashless payment concepts, AI-generated menus, pizza machines, and other hypes were discussed here. The gn connect serves as a platform for constructive exchange about developments and challenges in the gastronomy sector, with exciting programs and excellent culinary offerings, where participants network and learn from one another.

Dishwashing Truck and Service Robots: Efficient Food and Beverage Distribution

Lectures and in-depth workshops on various stages were part of the event, along with consulting on gastro topics and the presentation of new technologies and products.

The growing importance of sustainability in gastronomy was evident not only in the food served at the event and the latest food trends but also in the increasing demand for eco-friendly packaging solutions.

Throughout the event, food and beverages were served at various food trucks and coffee stages in eco-friendly tableware provided by greenbox. Afterwards, special service robots from the company Genie InBot collected the used plates, cups, bowls, and more.

The hybrid concept of using both disposable and reusable tableware worked flawlessly here. Not least because the Häppy range – the reusable tableware from greenbox – was cleaned on-site by the newly launched dishwashing truck for reusable tableware from Musikszene Bremen e.V.. This is a mobile dishwashing trailer capable of cleaning large amounts of dishes in a short time. To efficiently allocate the cleaning capacities, the cutlery was chosen to be biodegradable disposable cutlery made of wood from greenbox.

The Motto: Is This a Trend or Can It Go?

This year’s gn connect had various thematic focuses. 34 speakers from different professional backgrounds were featured, including notable figures such as Simon Tress, nominated as the most sustainable Michelin-starred chef in Germany, and successful restaurateur and gastro-coach René Dost. In addition to answering questions about online presence, tax law, and kitchen equipment, there was lively discussion about the modern possibilities of our era for gastronomy. Whether 3D-printed meat or AI-powered pop-up restaurants have the potential to establish themselves long-term remains to be seen.
